Kefalograviera PDO is a hard cheese made from pasteurised sheep’s milk or sheep’s and goat’s milk. It has a firm, elastic texture and is rich, sweet, buttery and slightly spicy. It is used to make the famous greek fried cheese dish, saganaki, but is also a useful grating cheese or it can be eaten alone. It pairs particularly well with bold whites or full bodied red wines.
