The Zensa Nero d’Avola Appassimento DOP is an organic red wine from Trapani in western Sicily. Use of the appassimento method—leaving 20% of the grapes to dry so as to concentrate their sugars and intensify the aromas—has produced a luscious and full-bodied wine, brimming with notes of ripe black cherries, plums, and a hint of spice. Its silky smooth texture and well-balanced structure lead into a long and persistent finish. Perfect with rich pasta dishes, lamb, and stews.
In Italian, “Zensa” (pronounced “senza”) means “without” or “to do without,” the perfect name for a range of wines produced free of chemicals or pesticides, only what Mother Nature provides. The Zensa Nero d’Avola Appassimento DOP comes from low-yielding, fully organic vineyards, with the first 20% of the grapes harvested manually in September and set to dry in aerated lofts for 10-15 days until the rest of the grapes are harvested. The two parts are then gently vinified together before 20% is again separated put aside for four to five months of ageing in oak barriques.
