The sweet and pungent Fontina is made from unpasteurized milk from cows grazing in the high, lush meadows of the Aosta Valley in northwest Italy. This semi-soft cheese has a mild, nutty flavour that makes it a great table cheese. It is also perfect in any recipe calling for a smooth, gooey meltiness, from casseroles and pizza to frittatas and grilled sandwiches. One of its traditional uses is a dish called Fonduta alla valdostana, made of Fontina whipped with milk, eggs and truffles.
