A coarse-cut pork salami originating in northeast Italy, sopressa is pressed by hand-“pressa” means “to press” – at the very beginning of production to eliminate and pockets of air. Bertocchi’s sopressa is traditionally air dried, fermented and matured. A fantastic all-purpose salami for platters, panini, pizza and pasta. A spicier version of Bertocchi’s mild sopressa for just a little extra kick.
