Pancetta stesa, or flat pancetta, is cured pork belly with a strong salty flavour. Cut like bacon and cured with spices, it offers a generous fat-to-meat ratio and feels soft on the palate. Often used chopped as an ingredient, or cut into thick strips and eaten grilled.
