Matilde Vicenzi strawberry savoiardi: A new classic

Our latest Matilde Vicenzi shipment brought in a great new product—a very special strawberry version of Vicenzi’s famous ladyfingers, that indispensable element of a good tiramisù.

For a company with such a long tradition—stretching back to 1905—Matilde Vicenzi loves to walk a fine line between traditional pastry craftsmanship and breathtaking innovation.

The Vicenzi story began with a small but exquisite line of pastries, savoiardi (ladyfingers), amaretti and sfogliatine sold from Matilde’s own artisanal bakery in San Giovanni Lupatoto, Verona. Matilde’s recipe book from those days is now a treasured heirloom as well as the basis of modern Vicenzi recipes.

Matilde’s grandson Giuseppe did not fall far from the family tree, growing up fascinated by the art of pastry he learned at his grandmother’s knee. But he was also strongly drawn to the possibilities of technology—this was a kid who begged for a Melzi automated biscuit maker for his 14th birthday!

Travelling to the United Kingdom and later Japan in search of new ideas and new machinery, Giuseppe expanded Vicenzi’s mass production, first with the instantly famous Vicenzovo Ladyfingers, and then Millefoglie d’Italia puff pastry.

The puff pastry in particular was the result of a special machine that Giuseppe acquired from Japan in 1975—and is still in use today!—to gently fold the 192 layers of dough and butter that have become the hallmark of the Vicenzi pastry tradition.

Perhaps that’s the secret—to innovate so brilliantly that your new creation immediately becomes the gold standard, with people calling it a ‘timeless classic’ because they can’t conceive of a time before it existed.

With just a few simple but superb ingredients—flour, sugar and 26% fresh eggs—prepared to rigorous standards, Vicenzi has somehow given its crisp, light ladyfingers the superpower of being able to survive a dunking in strong espresso and still maintain their shape and consistency.
