Salt-cured, rubbed with pimento and juniper, and then cold-smoked. Speck is sweet and tasty with a smokey aftertaste. Deeply red and firmer in texture than prosciutto, it can be sliced thin for antipasti platters and sandwiches or wrapped around a slice of fruit. Get your bacon fix without all that rendered fat! A few slices of speck with a hunk of cheese also make an excellent midnight snack.
