Pancetta arrotolata, or round pancetta, is made from choice Italian pork belly. The meat slab is rubbed with salt and spices and then rolled tightly into a log with the spices inside. Because it is salt-cured and air dried, the meat is moister and has a more delicate flavour than bacon. Tasty and traditional. Gluten and dairy free.
