A mildly cured, cooked meat made from lean pork and fat pieces (lardons) with a smooth, creamy texture and a delicate ham flavour inflected with pepper and spices. The most celebrated of Bologna’s many sausage products. Try serving it with walnuts, cheeses and tart berries, or use as the base for a delicious creamy spread. Gluten and dairy free with no added polyphosphates.
