The El Gran Cardenal Cabra y Vaca con Ajo Negro, a Spanish mixed cheese made from goat and cow milk, is made to a family recipe. This creamy cheese contains pieces of black garlic that give it a slightly sweet taste and antioxidant properties.
El Gran Cardenal was founded in 1951 by master cheesemaker Francisco Martín Laredo in the town of Torrelaguna, Madrid. In 1975, the company moved its production to the farming area of Medina del Campo in the heart of Castilla y León to take advantage of the richness and quality of milk in this area.
