One of Spain’s ‘big blues’, Valdeón is a bold, spicy cheese with dense deep blue veining. Made from a blend of pasteurized cow and goat milk in the mountains of Spain’s Castilla y León and matured for 45 days, it’s slightly milder than Cabrales but still packs a good punch. A tawny port or a sweet sherry make fine companions for Valdeón, and a drizzle of honey also works!
