The El Gran Cardenal Oveja Trufado is a Spanish cheese made from sheep’s milk and truffle. The truffle is added at the beginning of the cheesemaking process so that it matures together with the cheese. The creamy flavour of the cheese is balanced beautifully by the earthy, pungent flavour of truffles. The Oveja Trufado is the most exclusive of the El Gran Cardenal cheeses, winning the Super Gold Medal at the international World Cheese Awards for 2016-17.
El Gran Cardenal was founded in 1951 by master cheesemaker Francisco Martín Laredo in the town of Torrelaguna, Madrid. In 1975, the company moved its production to the farming area of Medina del Campo in the heart of Castilla y León to take advantage of the richness and quality of milk in this area.
