The Akkem Semicured Manchego is matured for three months, so it has a fresher, more buttery taste than aged Manchego but a firm, compact texture. Cured in the ancient cattle-raising region of La Mancha from Manchego sheep milk, Manchego was apparently the favourite of the famous windmill-tilting character Don Quixote, who clearly had great taste in cheese. The Akkem Semicured Manchego is a great snacking cheese and is also a real treat on a sandwich with some fine cured Spanish ham, or alongside fruit and a dry white wine.
