The quintessential Swiss cheese, Emmental is immediately identifiable by its cherry-sized holes, but it is Emmental’s sweet and nutty flavour and great meltability that make it indispensable to any fondue. True Emmental cheese can only be made in the Emmental Valley of west central Switzerland. Its production is regulated according to strict AOP (“Appellation d’Origine Protégée”) or “Protected Designation of Origin” regulations, which state the region of Switzerland where its milk must be sourced from, and where it is produced and matured. Lustenberger & Dürst has been crafting its Le Superbe cheeses for over 155 years, making them one of the oldest cheesemakers in Switzerland. While they produce some cheese themselves, most of their traditional varieties are produced in small villages in the Swiss Alps, and are sent to them for their expertise in slow and meticulous maturing before being packaged.
